NEW EASY SEITAN RECIPE + FREE LIVE VEGAN VIBRANTLY SUMMIT INFO

I am so excited to be a part of the Live Vegan Vibrantly Summit as a Bonus Expert. The plant-based movement is on fire! You do not need to BE vegan to enjoy learning about plant-based living. While eating more plants and less meat, dairy and eggs can be challenging (I know, I’ve been there), it gets easier if you have the right tools, recipes and resources at your fingertips. The Summit is one such resource and I can’t wait for it to begin next week on January 30th. I am so happy to support and follow movements like Live Vegan Vibrantly. As for my work, I put my heart and soul into my posts in the hopes that they will encourage more people to adopt a kinder way of living. Eating plant-based is not only kind, but also super easy, which leads me to today’s recipe.

seitan made easy

I modified my usual seitan recipe found here – Seitan Recipe – Devilishly Good so that this healthy delish dish can be on your plate in an hour. The recipe I usually use makes enough for an army and takes about 3 hours to complete. When I have the time, I make the full monty and it’s worth the effort but today my stomach was a rumblin’ and I wanted instant gratification!

So without further ado, below is the modified version of this delicious meat replacement recipe that contains healthful ingredients – like walnuts, nutritional yeast flakes (great source of vitamin B12), and herbs – and soaks up sauces and marinades with ease – ah music to my vegan ears

TIME SAVING MEASURES
  • Use vegetable broth instead of water so you can omit the onion and cook it for less time. Nota bene: onions are not good for pets and if your critters are like mine, they will want to try this dish- perhaps another reason to omit the onions
  • A mini-food processor can be your best friend for small recipes like this as it makes clean up so much easier
  • By opting for a recipe which serves 2-3 people (rather than the army) you will be finished – from cooking to eating to cleaning – in about an hour
