No Bake Raspberry Fudge
I kicked my sugar cravings long ago but now and again I love a little chocolate and especially in the form of fudge! Add raspberries and you’ve now got a dish that is worthy of a dinner party. Dates a great alternative to sugar and have the right amount sweetness and gooey consistency. They are a rich source of fiber, minerals and vitamins. This dessert tends to be messy unless you get the texture just right. A simple – beautiful – solution is to fill mini mason jars with your fudge and top each with a raspberry and mint leaf.
Ingredients
- 1 cup raw cacao powder (find this online or at a health food store)
- 1 cup pitted dates (emphasis on 'pitted' or you could break your Vitamix/ food processor!)
- 1/2 cup walnuts
- 4 oz package of raspberries (or other berries)
Instructions
- In a food processor, blend the cacao, walnuts and raspberries.
- Add the dates one by one and pulse until you get the desired fudge texture.
- Refrigerate for 1-3 hours.
- Enjoy!
